Easy Caprese Salad

This Easy Caprese Salad is my all-time favorite thing to make in the summer – especially with fresh tomatoes from the garden!

Delicious and pretty!

The great thing about it? So many easy combinations and simple ingredients!

I make this Caprese Salad as an appetizer, snack or side dish. It works for any occasion, fancy or low-key. Perfect for our next Weekly Recipe Win!

My kids like this best with mozzarella…

You can use mozzarella or feta cheese (I have both as options here), beefy sliced tomatoes or toothpicks with little cheese balls and cherry tomatoes. This time of year is the best – fresh garden tomatoes and fresh basil are so easy to come by!

Feta is delicious too!

In the middle of winter? I use store-bought tomatoes (on the vine or hydroponic if you can find them) and dried basil from my garden in a pinch.

But the best is now, when all the ingredients are fresh and so full of flavor!

If your drizzle of vinegar is a little more generous – as I did with the feta option – no problem! Just cut up some extra cheese to soak that up later!

And…for the Weekly Food Win (of course)…my kids all eat it!

I personally love to layer the tomatoes, cheese and basil (you can either set them apart on a small platter, or layer them all on top of one another in a single row). Then, drizzle with olive oil and the best balsamic vinegar you can find, then sprinkle with fresh ground sea salt and pepper!

Yum!

Sometimes, the best things are simple, with just a few ingredients, and something you can toss together in just a few minutes! This Easy Caprese Salad totally fits the bill!

Easy Caprese Salad

This Easy Caprese Salad is the perfect summer appetizer, side or snack!

Ingredients

  • 1-2 large tomatoes
  • mozarella ball or feta cheese
  • fresh basil
  • olive oil
  • balsamic vinegar
  • salt and pepper to taste

Instructions

1. Slice tomatoes and mozarella or feta

2. Layer tomatoes, cheese and basil. You can either lay flat in a serving dish (I use a pretty pie or quiche plate) or layer on top of one another in a row.

3. Drizzle with olive oil and balsamic vinegar

4. Sprinkle with fresh ground salt and pepper.
